The schedule for my job is typically getting every other weekend off, alternating with getting one day off rather than two. Sometimes worse, but I will not worry about that now. Lately this has sucked all my energy and I've reverted to mostly eating frozen meals, and just generally food I really shouldn't be eating, especially this frequently. I miss cooking and am in desperate need of some variety, so I was planning on attempting to prepare all my meals ahead of time, so I can eat somewhat decently but still have something super easy to grab or heat up after work. I have a few ideas of what I can prepare that will hold up well for a week, but I know eventually I'll want something new. Any advice will be greatly appreciated.
Criteria:
1. Must be vegetarian. Vegan would be ideal.
2. Must be able to grab from fridge and eat right away, or only needing a few minutes in microwave.
3. Must have a decent amount of calories and be filling. I'm very active at work so 1500 calories is my minimum (don't think I have a max at this point in time). This needs to be mostly spread between two meals since I usually either skip eating lunch or have a cliff bar (around 250 calories).
4. Doesn't necessarily need to be healthy, as I like to indulge at least once in a while, but being a healthy meal is a huge plus.
5. And lastly, it can't take up a whole day or most of a day to prep everything, since some weeks I only have the one day off and I don't want to spend it all in the kitchen.
Would also love any recommendations on the best way to store food. It would be nice to have something stay fresh for at least 5 days.
